My tomorrow diet always starts on a Monday, if Monday doesn't go over well (which it almost never does!) then I start "tomorrow" which is supposed to be Tuesday but I feel like I've already failed so bad for the week that it doesn't start again until the following Monday. My pre lovely ladies weight was 125 LBS on a 5'6 figure. Pretty slim and trim. But getting pregnant at a young age and vowing to eat anything I wanted didn't do a body good! 70LBS later I was just 5 LBS shy of 200!! I immediately dropped about 55LBS when lovely lady #2 decided to rent a room. I gained 40 with her but was obviously still way over weight! Since her arrival I've had the worst rollercoaster weight every!! Down and up and down and up and down and up! For the past year and a half its been up big time! I never did get back to the 195 but I'm only 10LBS shy of it! :( So anyway long story short....I decided to step out of my comfort zone and start the "FOREVER" diet...today. On a Saturday!!! Its going to be one of the biggest challenges, but I feel that if I can get through today, it will give me the confidence I need for tomorrow.
I stumbled across a blog last night and I'm kicking myself for not saving the website! I can't seem to find it anywhere! This blog was about a girl who went from being 40LBS overweight to being on the cover of fitness magazines!! It shows you how possible the end result is if you just stick to it. So this morning I made myself a delicious egg white omelet loaded with veggies and a side of strawberries. I read that its best to eat 6 small meals a day then 3 big ones. So I plan on eating every 3 hours today in hopes of sticking to it. I'll write tomorrow about how it turned out, but here's a pic and the recipe for the omelet if anyone wants to try it. If you want to spice it up a bit just add any seasoning and spices you have on hand. Egg Whites can be bland so just spice them up to taste. :)
Ingredients:
5 Egg Whites
1 Cup fresh baby spinach
1/4 Cup mixed bell peppers
1/4 Cup Zuchini diced
2 TBS Shredded Mozerella Cheese
1 TBS Salsa
salt
Pepper
Directions:
Sautee veggies in a skillet. You actually don't have to use any kind of oils, spinach wilts right up and the veggies will sauté pretty nicely in their own juices. However I did throw in a teeny dab of coconut oil. After veggies are soft remove them from and set to the side. Spray skillet and add your 5 egg whites, they should fill out the entire skillet, put sautéed veggies and cheese on one half of the egg whites and let cook for about 5 minutes. Once you can tell its cooked pretty through on the bottom you flip the empty side over onto the veggie side to create a half circle. Cook for another few minutes and remove! You can sprinkle a little more cheese on top if you'd like and then add your salsa! Add salt and Pepper to taste. Enjoy!
Hopefully in a few weeks I'll be able to post a before picture with a little bit of progress. I'm not quite ready to show the world what I'm working with, but hopefully once a few pounds shed I'll work up the nerve! :)
Have a wonderful Weekend!

Jewelry Tree
So I was shopping in Marshalls a few months back and I kept wandering past these branch looking things. I believe they are called Manzanitta but I could be wrong. They looked pretty cool but I had no where for them so I just strolled on by. I went about my shopping, which is seriously a dangerous thing for me to do at Marshalls, and then I passed a women who had them in her cart! And she was quite a fancy looking lady. Very elegant and rich looking, something I secretly envy to be ;) So I decided I should have them in my house too. I go back put them in the cart and check out. Now I'm usually pretty good at checking the price tag on things but this time I did not, I figured they were just branches after all and it was Marshalls so it couldn't be that bad...so I didn't check my receipt until I got home....oops! They were $15 each! I was shocked, I bought two of them so I now owned $30 worth of branches. They were immediately going back to the store!!...or so I thought, days and weeks went by and I completely forgot to return them, so I was stuck. Where in the world was I going to put these things and actually make them work?!?! This is the closest I could find to what they look like without showing you yet where mine ended up....
I'm still not too sure why I thought they would work for my house...but anyway....After they made their way around our house from shelf, to dresser, to filing cabinet, to counter top and after hubby and I had many little tiffs over where to put them since they didn't actually fit on any of the shelves, dressers, filing cabinets or counter tops and we were constantly running into them and knocking them down, I told him to just hang them on the wall one day! I don't care where, just hang them anywhere!
So I get home from work, and he did a mighty nice job at hanging them in the perfect spot in our bedroom....
I thought they looked pretty cool there, but they were still so plain. So as I was changing into my comfys one night, and taking my necklace off I decided to try hanging it from this "tree" that we created on our wall. And it looked pretty darn cool if I do say so myself, so I went through all of my jewelry and hung all the necklaces and chunky bracelets earrings and even a couple scarves on the "tree". Now my jewelry box has freed up space so the drawers can actually shut and I got to use my fancy decoration!!
Yay! So happy with the end result. Project #1 of many complete! I'm so excited about my journey to a Purdy life!
